Well, you're going to lose resolution one way or another if you shoot 1080 video. There's no way around it. You can't invent what isn't there. You need to shoot higher-resolution video so you work in a timeline resolution that works with the wide monitor, then scale & position the high-resolution video to frame it properly for the wide monitor.
Incidentally, how do you plan to play back this super-wide video on normal HD monitors? Or is this just something you'll play for your own enjoyment?
