Let's say I'm creating an inforgraphic showing world famous buildings in corrrect proportion.

Perhaps each 1000 feet could be scaled to 2 inches in the infographic, but I don't want to do the scaling myself. Is there a way to enter the building height in feet and have illustrator scale to 2 inches, kind of like CAD programs?

If the answer is no, then what is the best solution? Manual scaling? Or use another program (which one?) to create the infographic?

You can enter simple mathematical formulas into the height and width fields and Illustrator will do the math for you.
In your case, take the building that is 1000 feet tall.
Pretend it's 1000 inches tall.
Draw the rectangle. And then in the Properties Panel, find the Height and enter in 1000*0.002
Your rectangle will now be 2 inches tall. And you can label that anything you want.
Use the same formula for the rest of the heights of the other bldgs. Just alway enter the Height followed by *0.002
