Whenever I export a file as an .mp4 my Mac 5 keeps trying to open it in Adobe Soundbooth. The computer has it set as the default player. I can right-click and select Open With/Quicktime player, but how do I make it the default for this type of file? I can do this on a PC but I don't see it on a Mac.

Right click on the MP4 file and select "get info" you will then see an option to "open with" (about 4th down) - just select whatever software you would prefer to open your files with.

Should be it.

Right.
Then click "Change all", so every MP4 will open with the the application that you selected.

Referring to your question, you can do as following to change some files' default player.
Select one of your files in finder and click right mouse> Get Info.
In the Info window, go to Open with:
From the pulldown menu select Quicktime (or other player you would like to make default).
Then tick some file formats and choose the “make player my default player" button to assign that program to open that file extension by default.
