I'm doing a project where I'm using about 10 different fonts. It's kind of a pain to scroll back and forth up and down the list to switch between them. I noticed in AE there are some separate sets that are in there own little sections at the bottom of my font list. Is there a way to create a custom set like this?

No, but here's a thought:
You could save an animation preset for each font in your set and then use the Effects & Presets panel to apply these fonts to text layers. (The font gets stored with the source text, so you'd have to set the font before entering text for each layer.)
