I'd like to have the guy walk in front of the title rather than behind.

Would also like the title to stay the same place in the sky as the camera moves. I'm still new to AE so looking for a tutorial if anyone knows of one. Thanks.

The sky looks very clean - you should be able to generate a luma matte from one of the color channels. Take a look at this tutorial on how to generate a matte from existing footage.

Motion Tracking is what you need to make the text stay in place during the shot. Lots of tutorials at the COW on motion tracking.

If you can't pull a good key, you will have to resort to rotoscoping.

Heya Michael, it's not necessary, the luminance values of the sky and the other relevant objects will allow for a luminance matte to be generated. I actually haven't seen the COW tutorial I proposed in my earlier post but the technique mentioned there is what's required.
