Scroll to 0:14 and see what I mean:

It's obviously not professional, simply a paste, but I'm interested to know how this is done and if there are any tutorials on it? As a noob in After Effects I can only guess it has something to do with motion tracking.

What if I wanted to add emotion to the face I'm pasting, for example, can I somehow liquify my addition after it's replaced?

For this kind of "face replacement" you are right- it's just a matter of motion tracking. Track the position and rotation of the original head- Mocha should do this really well, but AE's own trackers should work fine also.
As far as the expresions- precompose the new face and apply track data to the precomp, then animate features inside the precomp using a distortion mesh or puppet tool...
For a more elaborate face replacement you need a 3d tracking software- Boujou or Syntheyes. Then use Freeform to displace the face in 3d.
