Have been trying to render out a file using the ProRes codec and it craps out on the last frame every time.

I've tried shortening the sequence

I've tried setting a different range.

It's only with ProRes.

I'm running CS3 on OSX 10.5.8 on a Mac Pro Tower 8 core with 4 Gigs of Ram.

Any ideas would be appreciated.

Do you mean that the footage you've imported into AE is Prores, or that rendering to Prores, or perhaps both?

The only things I can tell you right away are to turn off Open GL for rendering if you're using it, and if you're using multiprocessing, try turning that off, too.

Here's why I suggest turning off multiprocessing: you don't really have enough RAM to take advantage of it.

4GB may seem like a lot, but consider that AE can use 2GB+ per processor with multiprocessing enabled. That's at LEAST 16 gigs on your 8-core machine... don't forget that the OS needs RAM, and so do any applications you like to leave open.
