Let's say I want to apply a color correction effect to everything but her ears.
How do I do that?

You need to use masks:
Duplicate your footage layer and on the top most duplicate, use the pen tool twice to mask out the ears (set both masks to subtractive)

Place your colour correction on that masked layer!

makes sense, except for the: "use the pen tool twice".
I'll try to figure it out, thanks.

Because the ears are two separate features you need two separate masks to define them hence use the pen tool twice.
Todds tutorial is great though because if your actors face is moving it will save you a lot of time. Also, masking the face with one modified ellipse which avoids the ears is probably a little quicker and will be easier to work with, with the tracking data than if you had two separate ear masks.

Here's a video tutorial in which I color-correct just a face. You could use the same approach, just targeting a different area.

Note that you can use any mask or combination of masks on the solid-color layer used in the technique that I show. I just used an elliptical mask because it was a) adequate for the scenario of selective color correction in the tutorial and b) it was a fast and easy way to demonstrate the principle in a short tutorial.
