This may seem crazy/stupid... My camera seems to retain its memory even after keyframes are altered. Is there an explanation for this? Can I clear a camera memory. For example, a move to pickup a face in a window is erased leaving a straight zoom between two normal linear keyframes. Upon preview, the camera move is still evident.

You should try using the Purge All command to clear the previous RAM Preview. If it doesn't help, and you are POSITIVE you altered the keyframes properly, save the project.

And then I have to ask you this: when was the last time you did any of the following:
  • Quit AE and started it again?
  • Restarted your computer?
  • Shut down your computer, and started it up again?

These simple steps can fix a lot of AE weirdness.

This sounds like the famous boomerang keyframe effect. Here's a tutorial on it Part one and Part two. Those tut's have some other useful tips.
