I want to start selling Motion graphics online, but want to organise my After Effects projects so its easier for the client to adjust and edit. i.e easiest way for a client to replace a logo PNG for the lower third inside of After Effects.
One trick is to pre-compose all images that you want the buyer to be able to replace and then apply effects and animations to them.
Also, organizing your project assets in folders with descriptive names will help (for example "Images to replace" , "Comps - Do not Touch" and so on)
I've also found that parenting colors from your precomps to color effects in one Null object layer (let's call it the Color Control Layer) in the main comp is helpful. This way the user doesn't need to dive into all the precomps to change the colors, but can do it easily from one effect window.
And ditto on the folders and naming. The more organized and clear everything is, the better.
