Rotation in all axis issue

Rotation in all axis issue

Hi all, hoping someone can help me understand this issue.

When I rotate this plate, all axis (HPB) change their values, which is in itself confusing, at least for me.
However, what's truly baffling is that when I rotate it in order to build the animation the plate rotates smoothly only over one axis, however when I play back the animation after the keyframes are created the plate wobbles all over.

If anyone can help understand why this is happening and how to prevent it I will greatly appreciate it.

Thanks, Brian, it does to a point.
I'm on R17 and that option is not available yet, I see it's available on R19 and obviously, R20 (I have the demo) has it, but not mine.

I think I can solve it changing the priority with this technique:

I don't have time to watch the video at the moment so maybe it's in there but just in case... you can also use Freeze Transformation and then only rotate it around the one axis - I would only keyframe one if I only wanted to rotate it around one.
