Modeling Lettuce... where to begin?

In the pursuit of modeling the perfect cheeseburger I'm trying to devise a way to make a nice, realistic-looking lettuce leaf. So far I've been working with displacement maps and I'm not having much luck because the lettuce edges often fold and curl over themselves...something I'm not entirely sure how to replicate. Any advice on where to start would be really helpful--I'm relatively new to c4d so I might be missing something fairly obvious. Thanks in advance!
