I've been asked to come up with a few log designs for someone and thought about creating the text to look like a beenie plush toy (so the text basically looks all soft and cuddly!). I've used MAX in the past but very rusty now and just wondered if someone could advise me on how to do this? A brief step by step would be very welcome, particularly with applying materials as I just can't remember how to use the damn thing!

Sounds like you need to investigate reactor.

Try creating your text, extrude it and add a soft body modifier then create a soft body collection.

You also need something the text to collide with such as a box else when you preview your animation in reactor the text will just keep on falling forever.

I think there are some tutorials out on the net related to this.

Try Youtube and Google.

Hope this points you in the right direction ?
