Kernel panics can happen for any number of reasons. One of the most common is using still images of too high a resolution/file size, and not allocating enough memory. You also need to keep enough free space on the boot drive for FCP to handle it's processing overhead. Some folks are using FCP7 with Mavericks and it is still holding together, with occasional burps here and there. If you love your FCP7 setup, your answer to system stability is to freeze the computer OS and DO NOT UPGRADE any more on that system. Or, create a dual-boot system and keep a clean OS 10.6.8 install with the suite on a distinct partition. You should also image the whole thing and store the copy so you can re-install with one keystroke if needed.

If you insist on upgrading OS's, and not keeping a discrete partition for the old system, you are gambling and eventually will lose the use of your FCP7 system.
