You'll need thunderbolt adapters.

You can afford more than the base model? I can't even afford that. The base would be fine for many many things, even Resolve and PPro. Get what you can afford.

You'll need drives with connectors far faster than eSATA. Thunderbolt 3 RAIDs for 4K 60p. Fast drives is what helps with large data rate video filse.

This can be done quickly with an iMac 5K, nothing special about that. 2 min? Lickity split...base MacPro will do that.
