I company I just started working for has this camera and it has rarely been used except for inside interviews. I'll be shooting some agriculture - fields, veggies, small plants and people soon. Any recommendations for tweeking the settings to get a better look? Right now the blacks are really black.

Check the manual.
Format depends on the delivery.

Like Chris said, read the manual and adjust the pedestal level if blacks are crushed.

Here ( http://www.panasonic.com/business/provideo/scene_files_main.asp ) is a link to scene file settings for Panasonic cameras including the 300. Select that camera on the page> go to the drop down menu on the 300 page and select nature. That's a good place to start for an outdoor set up. Take a look and see if it helps. You might want to tweak it a little to fit your desired look.

I have wondered about this also. Just got thru documenting Irene for my company and noticed (as before) that when shooting in bright sun the blacks are really compressed. Is this a small imager issue? Am waiting for a sunny day to play with Gamma and Ped.
