I'm trying to convert Apple ProRes files to an H.264 signal so that they can be played through iTunes. They will be projected on to large screens. Is there any way to do this without losing quality?

Whenever you compress a video file there is some to much image quality loss. Export your sequence using "Current Settings"
Take that file into your compression program and make the deliverable. In your case, a mov file w/ .h264 codec. Choose a high data rate and frame controls to preserve quality.
