This is probably an insanely easy/obvious answer, but i can't find it anywhere I've looked. What's the difference between the color and color solid matte?

One's gray and one's blue. There is some engineering differences on how they work, but for the user there is no difference.

All the best,

Nothing really. One is older, one is newer. They do the same thing. The Color Solid I think is newer...

Both are generators.
The new one (solid color) if Fxplug, so with some configurations you may be not able to use it.
