What's the easiest way to convert footage from a RED camera to Apple pro res 422, so I can edit it in Final Cut 7?

That depends on the camera used, how it was acquired and how it was recorded. Not all RED footage is created equal.
Since you simply say "RED", we're not in a good position to help.

Download the Red Log and transfer plugin and use Log and Transfer. Very easy.
