I'll be working in FCP 7 with ProRes 4444 footage from an ARRI Alexa in a straight on-line workflow (4444 is our master). I know the footage will be 1920 x 1080 pixels. But...

If we have someone create any imagery in Photoshop or elsewhere to import and composite, should they create images at 1920 x 1080 with square pixels? Or some other setting with another pixel aspect ratio? Sorry for the dim question, this always confuses me, and searching didn't help.

If everything is 1920x1080 there's no reason to change now. And you're working with material that has square pixels, so no reason to change that either.

Right.
1920x1080 and 1280x720 are SQ pixels.
Photoshop by default uses SQ pixels; just set the size.
