cutting a subject out of a frame and reusing it

in the movie scott pilgrim, a shot ends with an over the shoulder shot, the shoulder is then cut out and reused within a montage. essentially what im asking is how could you cut out a shoulder from one frame and keep it in the viewer while you have other clips playing behind it?

Do you have photoshop?
Export a still.
Open in PS.
Cut out shoulder.
Save.
Re-import into FCP.
Put Shoulder still on track 2.
Videos on Track 1.

Travel matte is what you're looking for. Walter Biscardi has two tutorials on the subject here on the Cow.

How could I adopt the travel matte to remove a small sign from a scene. The sign is surrounded by foliage and i want to replace the sign with the same foliage?

A quick and simple way is to use a clone plugin like CHV's to copy a piece of foilage and paste it over the sign. You can keyframe movement if the shot isn't static.

A more roundabout way is to copy the shot to V2, crop it down and move it to cover the sign. It is a complicated way of doing what the clone tool does.

Probably the best way is to take the clip into Motion or After effects and rotoscope the sign, replacing it with some nearby foilage.

I heard that there way to use after effects(cs5) and final cut to key in pixels of a frame in motion, so lets say the shoulder pans from left to right and i want to cut that movement (5seconds) and have it pass through different backgrounds?
