I'm working on a project that involves First Person footage on a green screen to portray them in an alternate, psychedelic world.
I am using trapcode particular to stylise the effect and was wondering if it was possible to make it appear as if when the hands move around it is affecting the particules like it would if you did it in real life. or like at the beach if when you move your hand the sand is affected by the movement of your hand.

If you mean just the particular particles (the floating spheres), you can give them some interaction with the spherical field. It's pretty primitive, and there's only one.
A better option would be Trapcode Form which gives you two spherical fields, but even better, it gives you layer maps whereupon you can control the area in which a fractal field effect takes place, so you could use an alpha of the hands (or even a cumulative version of the alpha) to drive the fractal field only where the hands are or where they have been. That could look quite convincing.
