I tried to use the Firestarter preset using a pre-comp of text as a layer emitter. The particles fill the screen as spattering of fire, instead of the rocket like plume. Can anyone give me a hint what setting I'm missing?

Layer emitters don't work like other emitters, it's as simple as that. Without major adjustments you won't have any success. It would be better if you created your emmitters differently. The most feasible solution would be to have a separate comp that acts as the emitter or attach multiple Particular emitters using tracking. If you use the box type, you can set its parameters so its size matches the width of a letter.
