Our video server (Telvue) only takes MPEG2 video to display on air. I currently have been using the MPEG preset DVD (NTSC, PS). Is this the best quality MPEG I can upload to our video server? We only broadcast in SD.

I know a decent amount about codecs but fine tuning them, I don't know a lot about.

Thanks.
I know I should read a manual.

You want an MPEG2 transport stream (MTS) or an MPEG2 Program Stream (MPG). You'll need either the specs or an existing file to determine how squeeze should be setup.
