Editing software confusion

Already have capture card in pc but looking at different software to create DVD's but none of them seem to do what i want. They all seem to incorporate all these special effects that i dont need or want to do!

Does anybody know of a decent software package, that can:
1. Capture from analog source e.g U-matic
2. Edit the video and audio
3. Easy to chapter and menu facilities with ability to create my own
4. Add additional files to dvd e.g pdf files
5. Quick rendering time
6. Possible encryption capabilities or regional coding

Any suggestions would be most helpful.....

I'm using a Matrox RT.X100 system to do everything you list, except the encryption. While Adobe Encore does support encryption and region coding, you can only get that on pressed discs, so technically I could get the extra encoding. It's just too expensive for my needs.

With a fast enough computer, the Adobe Video Collection would probably satisfy your needs. On a slower computer, the hardware acceleration from the RT.X100 would still give you realtime.

P.S. The RT.X100 also includes analog inputs. One caution though, the X100 has very strict hardware compatibility requirements.
