Shooting day for night - how do I do it?

Our team is, all being well, soon to begin shooting a slasher movie on miniDV. The film is set at night, but we want to hopefully film during the day and then tamper with the footage later in order to make it look like night time. How can we do this?

I did a small test shot in Premiere 6, upping the amount of blue to give it that "moonlight look", and I pushed the gamma up to max which really made it look dark. I also played around with the gamme, contract, etc. in TMPGEnc Plus afterwards (all our films are exported to VCD). But the sky still looks too white.

In short, does anyone know how I can improve upon what I did above to make our footage look like it's nighttime? And how to avoid the white sky effect?
