Let me ask the experts ....

I am buying a new system. What type of monitor is best for video editing? I'd like a flat panel but I've heard that shadowing and a slight "lag" in video makes it difficult to watch. Is CRT better for watching video (and editing) video? Is flat panel a good thing only with text and static images?

The flat monitors (i.e. LCD) is much better than it used to be for video, but still not good enough, imo.
I am using a Matrox G550 card for dual monitor support and I have two 19", Samsung, SyncMaster 955DF's. Lots-o-real estate. I have been using 2560 X 1024 (2X 1280 X 1024) and it is great. Recently though, since a guy that works with me has older eyes than me :) I am using 2048 X 786 (2X 1024 X 786) and it is good too.

If you want a flat panel display, go with the 42" Plasma's. They are great! ......... but quite pricey.
