Chroma Key UV to RGB translation?

As a pet project, I'm tinkering with a 20 year old non-linear video edit system made by MacroSystem for the Commodore Amiga.

One hardware feature of the video card is a live chroma key option. I'm looking for some technical help with it. The settings for the keyer, include a group of four sliders, defining two ranges for U & V values.

U - Low
U - High
V - Low
V - High

I can experiment randomly and achieve a key but don't complete understand it and it may not be as good as it could be.

How do I translate an RGB colour value or range into something useful for these U/V settings. I think the U/V is just the chroma part of YUV colour space.

What would be a best starting point in the U/V range for keying green or blue screens?

I found some older manuals with more information on MovieShop's realtime chroma keyer and some settings for the UV values.

BTW, VLab-Motion is the capture/playback card used by MovieShop.
