Rebel T2i for stop mosition

Hello.

I'm trying my first stop motion animation and am planning on using the new Canon T2i, DragonStop Pro for capturing, Photoshop for cropping and processing, assembling in Premiere.

The final output for the festival circuit digital projection is 1080i (59.94 fields/sec) 16:9 square pixels with no anamorphic squeeze. (MPEG-2 DVD?)

From the specs, it appears the DSLR shoots rectangular pixel stills and 1080i video.

My Qs about the workflow:

How and at what point do I crop my RAWs in PS for 1920x1080 square pixel resolution output when I put them into Premiere?
Will I have to squeeze or stretch them in PS?
Does Premiere automatically convert the 1080p video to 1080i?
