Why bother with AVI

I understand that uncompressed AVI is the best way to capture old VHS, but in order to convert onto a DVD, the video has to be compressed to MPEG2 or some other format, reducing the quality. So what would be the reason to ever capture uncompressed in the first place?

You can edit an AVI file. You can't edit an MPEG2 formatted for dvd, because it's not continuous. You only get a full frame every 15 frames. The intermediate frames are difference frames.
