How to have the camera stay centered on a moving object while zoomed in?

Hi there!

I'm looking for a way to achieve a particular effect. What I'm looking for is to have a shot zoomed in, and have the screen centered on an object. When the object moves, the scene will pan and move around in order to keep that object centered dead-smack in middle of the screen.

An example of what I'd be looking for is this GIF - http://i.imgur.com/rVObBjw.gifv

During the slow-mo replay, the camera zooms in to focus on the female fencer. What I'd like to do is be able to focus on her off-hand dagger. So ideally the handle of the dagger would be in the middle of the screen, and as she moves it around the dagger remains in the middle as she continues the action to really focus on what she's doing with it.

I know I repeat myself a lot with what I want, however with everything I've been googling about this I can't quite seem to find what I'm looking for. A lot of just motion tracking an object.

Is this effect possible at all?

Thanks!

...and for motion tracking, one uses After Effects.
