One stupid question, and I think I already know the answer. Can you ad multiple pages to an Illustrator document? I don't want several saved files, I want one large one.

Yes. You'd be setting page tiling.

For 8.5x11 Portrait Letter format.

Create a new document and choose the Letter preset.

Click File/Document Setup - Set the width to 17", click OK.

Click File/Print/Setup. Set Tiling to Tile Full Pages, and make sure your X/Y Placement is 0. Click Done (not Print).

Click View/Show page tiling. Walla.

If you want 20 pages, you can make the artboard 5-across and 4-down (42.5" x 44"), or whatever.
