Converting existing images to outlines

How do you take an existing file and change it to outlines? I have a logo that I made for a company and they want to change the location of the type. I don't want to remake the entire thing, so I was hoping I could convert it to outlines and just move one peice at a time. I can't figure out how to select just one part of the image, however, it selects the whole thing and I can't ungroup it. I'm new at the program, and I know that's part of the problem, but any information would be a huge help for me!

use the white arrow (the 'direct selection' tool) that's right next the default black arrow ('selection' tool) in the tool pallette....
then select just the points you want to move...
then move 'em.

I can't select it when it's a flattened layer. That's my problem. I have people sending me logos that they have flattened from being layered and I can't do any kind of editing on it to reshape or layout differently to fit in different size imprint areas for different items. There may not be any way to do it, I'm not sure, but if I wanted to change something about it or find the text used in it, I'd like to know if there is a way or if I'm basically just screwed. ;)

Illustrator. I have existing jpgs that I need to make into vector eps files and I can't figure out how to do it.

Sounds like you should use the Auto Trace tool. It'll need to be smoothed/cleaned up but...Here's the instructions copied from the AI Help link:

Tracing with the Auto Trace tool

Guided by the boundary between differently colored/shaded areas, the Auto Trace tool traces any bitmap image shape automatically, creating a vector object filled with the current fill and stroke. With this tool, you can click the edge of a shape you want to trace, and Illustrator draws the entire outline of the shape. Or you can trace the edge between two colors or shades in a bitmap image. You can use the Auto Trace tool to trace lines as well as shapes. When you use the Auto Trace tool to trace a line, it travels all the way around the line and comes back to where you clicked, forming a closed path.

The Auto Trace tool is especially suited to tracing simple shapes and lines. For the best results when tracing artwork, trace simpler shapes with the Auto Trace tool and draw more complex shapes with either the Pencil tool or the Pen tool. You can also use a dedicated tracing program such as Adobe Streamline
