RGB to CMYK and 'convert to profile'

RGB to CMYK and 'convert to profile'

In Photoshop CS3 when changing an RGB file to CMYK to import into a Quark (or InDesign) file for high end press printing I wasn't asked about the profile. In Photoshop CS4 it suggests I go to 'Convert to profile' and then gives a list as long as your arm with things like 'Working CMYK– US Web Coated (SWOP) v2' etc which are meaningless to me. Does the output country alter the need to change settings? If a job is printing in Australia or UK and all I want is to save the file as a CMYK Tiff what setting should I use out of the many that are there (I don't know the press that will be used). The default setting seems to be the one mentioned above. Thanks all!
