If we are going for a 1.85 format with the RED, what would be a better option: shooting 4k in 16:9 or 4k in 2:1??

If you want 1.85, then I would shoot 4K 16x9. Here's why.

4K 16x9 = 4096x2304
4K 2:1 = 4096x2048

Now if you had a 4K 1.85 setting, it would be:

4K 1.85 = 4096x2214

Since 4K 16x9 vertical resolution is greater than the 4K 1.85 vertical resolution, all you need to do is crop the image slightly in post.

If you shoot 4K 2:1 4096x2048 and wanted to get 16x9 from that, then you'd have to crop it to 3788x2048.

So I'd rather have 4096x2214 by cropping 4K 16x9 than have 3788x2048 by cropping 4K 2:1.

Thta's correct if you shoot on RED Drive. If you shoot on CF cards, you'll be limited to RC 28. OTOH, I always had difficulties to see a difference when compared to RC 36…
