Compression Primer Please

We have some videos shot in HDV (on a Canon HV30). We've edited them in final cut pro. What is the best work flow for compressing them for YouTube and Vimeo? I'm using Sorensen Squeeze, which I like a great deal. What codec should I export them with to use in Squeeze? Finding the right parameters in squeeze for YouTube and Vimeo isn't too hard ... the recipes seem to work well enough. My concern is am I starting with the highest quality file before compressing? I was exporting it is the "current settings" - which are those of the captured HDV. I've fiddled with Apple's Pro Res (HQ) 422 and a few others. But it seems to me that one cannot export the HDV footage at any higher quality that what it was captured at ... perhaps I'm missing something here. Any suggestions?

[If some one could point me toward a tutorial that would be appreciated. I clearly don't have a grasp on all this: Just today I took a 500 MB movie and "compressed" it to 800 MB.]
