Mpeg Streamclip - multiple conversions

Operating System = Mac - Snow Leopard
Conversion Software = MPEG Streamclip 1.9.2
Source Codec (DVD files)
Destination Codec = Highest Resolution Video and Audio that doesn't need to render in FCP
Type of Destination Use = Create Demo Reel in FCP (cut down versions of original Source material), Create Flash Video Versions for Web (Full Length)

I have all of my documentaries I have cut on DVD's. Most of them are about an hour in length and I was hoping to rip them through Mpeg Streamclip into the highest possible file(s) so I can edit them in FCP without rendering the timeline. I have the hard drive space so I would like the files to be uncompressed (highest quality).

I would also like to create flash video files from the original ripped files.

Any advice and/or settings I should use in Mpeg Streamclip would be greatly appreciated.

What were the DVD's MPEG-2's encoded at?

I'd go with the ProRes Codec.

There are several Pro Res Codecs. Which one should I use?

444
422 (HQ)
422
422 (Proxy)
422 (LT)

Should the Quality of Video be at 100 %
Sound = should it be uncompressed or should I use the pass Thru setting

Frame size = should I keep it native 720 x 480 (DV-NTSC)

Field Dominance = should I keep it upper field?

Should I deselect the following:
Interlaced Scaling
Reinterlace Chroma
