compression tutorials and resources

Can anyone point us in the direction of a good tutorial on the myriad of possible compression codecs and settings? I'm looking for information on the fundamental principles, comparing the various methodologies, and identifying the best practices for different scenarios. ...something that will tell me what to use when my video is text heavy, or contains a lot of movement, or contains a limited color range. ...what to use for delivery on the web, or a dvd, or when converting to an flv.... I am interested in learning the fundamentals. Most of what i can find online focus don't get into the theory behind it all.

Of course I respect everyone's right to get paid, but any free online tutorials or whitepapers would especially be appreciated. Your favorite book on the subject would be cool to know too.

thanks!

Well, I wrote a book, linked below in my .sig.

I don't know of any good, free tutorials out there right now.

There are plenty of tutorials for particular products, but nothing that's general.
