Multi day Timelapse Date and Time Timestamp

I recently created a timelapse that spans over several days. I would like to add a timestamp that shows both the date and time. I’ve come upon 2 separate approaches, however I’m not sure which one to pursue first...

Can the numbers plugin produce something like “mm-dd-yy hh:mm:ss”?

Or should I try coding something as a text effect?

Ok everyone... It's not pretty but I made something that works... Does not account for month rollovers either.
