I general set up my comps to be 1920 x 1080, but the projector at our performance venue outputs 1280 x 800. The tech director tells me that his software (Qlab) does a good job of scaling and mapping images. Is there any reason that I should depart from 1920 x 1080?

Talk some more to your tech director. Get some delivery specifications, ESPECIALLY concerning the screen aspect ratio.

A normal 16x9 video image would be 1280x720, but this is 1280x800. What's with that? You need to find out.

Glad to hear you have a meeting. I recommend asking atbout media containers (mxf, mov, mp4, etc.), codecs (h.264, prores, dnxhd, etc.), frame rate and h&v dimensions. These were probably on your list already, but it can't hurt to mention them.
