Analog waveform with HVX and other concerns

I'm an inexperienced cinematographer and am in the middle of production of an indi film and am using an HVX205A
I will shoot the picture in 720pn. We will be using an old analog waveform monitor and my concerns are:
I will be using two monitors connected to the camera, one as camera mounted connected through s-video and the waveform connected through RCA.
Is this procedure ok? If not could anyone point me out in the right direction?
I won't be able to get external HD monitors, the budget doesn't fit.I just would like to know if the waveform monitor will be able to fully read the picture outputed from the hvx.
Another concern is that I want to be able to use the most dynamic range as possible and adjust luminance in post but my DP is disagreeing with me and wanting to adjust that in production.
I will be also editing the picture and I don't want to miss any pixels! Please give some light!
