InDesign Magazine Document Setup

Am working on a 24-page magazine that will be saddle stitched. Been working for hours trying to get the document set up correctly, to no avail. I have a good amount of experience with InDesign, but not specifically with setting up the documents.

The specs I have to follow are as follows:

1. Flat Printer Spread Trim Size (Before being Trimmed): 11.625” H X 17” W
2. Flat Printer Spread Final Trim Size: (After being trimmed): 10.75” H X 16.375” W
3. Final Fold Size: (After being stitched): 10.75” H X 8.1875” W 
4. Head Trim: 0.375”
5. Foot Trim: 0.5
6. Saddle-Stitcher Lip: 0.375”
7. Bleed: 0.125”
8. Total Face Trim: 0.5” (1/8” Bleed + 3/8” Lip)

In terms of the main document height and width, do I want to use the "before trim" or "after trim" numbers? Am I correct to use margins to set the head and foot trim? And I don't get at all what the saddle-stitcher lip is. Any guidance would be appreciated.

I work for a Magazine Publishing company. I would like to know which version of indesign you are using? as that might help, coz am using CS3 and some of those options are not available on mine.

I have CS3. I'm particularly perplexed by what/where the saddle stitch lip is.

go to FILE-PRINT BOOKLET: the Dialog box that comes has stuff about saddle stitch depending on your packaging method you might need to specify or not.
