Is there any way to change the color of a solid already in my composition aside from using a fill effect?

Select the solid and choose LAYER > SOLID SETTINGS. You can change the color there.

If you're trying to change your solid color throughout your project, like from one color to another...

Apply the Adjust> Hue/Saturation effect and click on the Channel Range stopwatch in the effects window. Then as you scroll through your timeline you can adjust the hue of your solid and it will be keyframed throughout your project.
