What do I select to capture Svideo and Composite through the Kona LH? Using FCP with a G5 and a KL box. SO far I can't see any presets for them.

composite goes into the Y input. Go to Audio/Video Settings/Capture Presets, and select (check) composite from the long list.

The Green input is for composite and the Green and Blue are for S... you need an S to BNC adapter for this...
