Dual Core versus Quad Core

All of our current systems are 2 x 3GHz Quad-Core Intel Xeon machines running Tiger. The issue is that Apple only ships these machines with Leopard. We do not want to move to Leopard yet due to XSAN and server concerns. We could install a 2 x 3GHz Dual-Core Intel Xeon running Tiger. Don't think running one app at a time will change the feel of the machine a whole lot, but running multiple apps at the same time might. I've no problem running a compression in Compressor, and rendering in FCP, and running Motion all at the same time, but figure that running a quad core machine instead of an 8 core, I would see a slowdown in performance. That said, it's not possible to run Tiger on a current dual quad? (I sure don't know if there's problems doing it...)
