Well, as most of us FCP users have found, QT updates have been plagued with problems for some time now. It's best to sit back and wait with most things Apple.
I do get the feeling that Apple is moving a little to fast, getting a little to big, and some things are falling to the wayside. iTunes movie rentals is obviously a much bigger profit point than FCP sales... so we have to be lighter and faster on our feet.

And will that waning confidence make you consider switching to another non-linear editing system? I'm not.
What everyone has to understand is that Apple is gaining market share in the consumer market. Updates like QT 7.4 seem to me aimed at apps like iTunes, Apple TV and the new move download system. It has nothing at all to do with ProApps. So there is really no reason for a ProApps user to download it.
Apple is going to keep issuing updates that help their consumer apps because that's a growing segment of their market, which is very likely growing faster than the proapps side. So you have to accept that not EVERY Apple update is going to help your pro-apps.
As with Any Apple update, always tread lightly as we have infinitely different FCP configurations and even the ProApp updates can work perfectly for some, and terrible for others. Witness all the folks who can't run on Leopard while another large segment has no issues.
As with any other update from Apple, I usually wait at least a month before installing to see what kind of issues may or may not be related to the update. This is why we have three high def editing systems all running Tiger with QT 7.3 to this day. No rush to go to Leopard just yet or even QT 7.4. I saw nothing in the update that we needed so I left it.

My confidence in Apple also has been stretched a lot lately and as a Pro user I definitely feel like I've taken a back seat to the iPod, the iPhone and most other products Apple unveils these days. BUT...
Our audio guy just had his G4 ProTools tower die on him and rather than pay to get it fixed he decided it was time for a new tower. He called Digidesign to get a recommendation for the purchase and their advice was simple: Don't buy a new tower, ProTools isn't qualified on them yet! They said in 6 - 9 months it should be ready for the MacPro, but until then he is better off staying with his G4...

Do what I did when upgrading to a new version of FCP or any other piece of software: Make a copy of the existing system on a separate drive, then do the upgrades on that.
If it all works out, use that as the boot drive. If not, go back to the original drive and wait.
While it takes time to make a duplicate boot drive it's easier than trying to go back to where you were by searching for older installers and updates.
BTW, a nice drive duplication software is SuperDuper.

We just dropped ProTools for Logic 8 this weekend. My mixer is thrilled - I'm personally hoping the experience is similar to when we switched from Avid to FCP.
Per the QT thing - I did a clean erase/install wipe of my system this weekend now that AE is supported on Leopard. Part of the reason was to not install qt 7.4. With all the installs and downloads that you have to do from the original version of Leopard though, I accidentally installed 7.4 again. DOH!
Leopard does seem a little more stable with a full erase/install rather than an upgrade. It ain't perfect though....

Hopefully you'll like that. A buddy of mine who's been mixing shows for many years does not like Logic for mixing. Absolutely LOVES Logic for music creation, but not for mixing a show or a feature. He uses ProTools for all his mixing.
Again, hopefully your mixer will like it and be able to mix the show well too.

This mixer actually recommended it and he was a Pro Tools fanatic back in the day, so I'm crossing my fingers. These are for promos though, so it may be much easier to mix :30 instead of 30:00.
Worst case, I'm out $600, which boils down to about 4 hours of audio post house time. I love the ideas of mixers coming here rather than me having to go out of house. Nowadays I think we can even read VO at William Morris or whatever agency reps our VO guys, so it's not like I'm sacrificing much logistically.
Results may vary though, so I'll post a RE: of how it goes after our first mix next week.

I agree with Walter's defending of the decisions to favor money making applications, BUT, I think there are other options that may keep everyone up and running as well as continue to keep Apple a profitable company.
Most of the time in the system upgrade dialog box it will say something like..."this update is recommended for all users". I'm not sure what QT7.4 said, but it seems they could mention that the upgrade addresses consumer product issues only.
Another great thing would be a ProApps version of QT, and a consumer or prosumer version.
I find it extremely hard to believe that QT7.4 was created without at least a basic test with Leopard and Final Cut, if it was, then that was a big mistake.
Some of the reasons Apple is gaining market share is on the backs of long-time users, like most of us here on the cow.
Anyway, just my 2 cents.
I'm pretty lucky, QT7.4 seems to have only effected my ability to export to DNx codec, basically unusable. But my system as a whole is working fine. I won't be shopping for a new NL system anytime soon, but I hope Apple hears our cries, and at least addresses them.

THAT would be a very good idea. Or at the very least a ProApps Software Updater that would be installed as part of the Final Cut Studio package.
Of course, it's still up to the user to confirm that any third party hardware / software such as AJA and BlackMagic cards work with any and all Apple updates.
