I'm an audio guy that get's stuck doing video stuff from time to time, so forgive me if I'm asking a dumb question.

Often times I'm given videos in various formats and I need to trim the heads and tails, or something equally simple. All I want to do is do a quick edit and often times I don't know the original files settings and it makes it hard to set Vegas up right. Is there an easy way to tell Vegas to use the settings of the source content?

There sure is.
Go File > Properties and click on the Match Media Settings icon(top right, looks like a folder).
Browse to the folder where the file(s) is/are located, click on one of them and click Open.
This brings you back to the Properties menu.
Click OK and your project properties now match your source video.
