Clarity and Rendering

I was able to figure out my bad capture problem thanks to all of your help! My question now is...how do I get better clarity on my finished product?
I have a Sony A1U HD Camera and am using Vegas 7.0 to capture and edit. To give you an idea of what I am looking for or thought I was going to get here is a link...check on the 2nd and the 3rd videos.
The 2nd one is what I was hoping for as far as the end product...but what I end up with is the 3rd video.

Any help is GREATLY appreciated as this camera is kind of going to be a side business for me doing something similar like the 2nd video for a local wine retailer here in Cleveland!
