How do I find the right mp3 recorder for recording podcasts?

I need to record a range of speech-based audio to edit and then put up on a website as podcasts. This will range from speeches at conferences to one-on-one interviews. Since I don't know about the recording expertise of the various conference organisers I'd like to record my own version of the talks.
What's the best way to go about selecting an mp3 recorder for this purpose? I'm in the UK.
