PLS Help with HD editing

Hello,
I'm a bit confused as to what settings I should be using when editing with HD clips. I shot HDV with my Sony FX1. When I captured on FCP, I captured in DV. My settings as of right now are:
Sequence Settings are:
NTSC DV (3:2) 720x480
Pixel Aspect Ratio NTSC CCIR 601/ DV 720 x480.
Quicktime Video Settings:
DV/DVC Pro - NTSC
I tested the quality by exporting in DV-NTSC. And it looks horrible. The lines are jagged.
Is there anyway to fix this now or maybe in the future for my other projects?
PROBLEM 2:
I edited in HD and having problems burning the final product on SD. What is the best setting and process to get the a really good quality video. I have read to export Apple ProRes 422, or ProRes 422 (HQ). I don't have this in my export setting. I have Final Cut Pro 5.1.4. I do see Apple Intermediate Codec.

ProRes comes with FCP 6. FCP 5 didn't have that codec yet. When you capture as DV, then your footage is SD. You cannot edit this as HD. If you want to edit this as HD you need to capture it using the HDV 1080i60 settings. Or AIC...but that is compressed and lacks timecode information.
